Ritz-y Fish Tacos

Ohh my word, these are some yummy THINGS!  My taste-buds rejoiced! To make it even better they were easy.  Recipe courtesy my sis in law (:

ingredients:
Fish
vegetable oil 
buttermilk
flour
1 Sleeve Crushed Ritz Crackers
Taco Seasoning Packet
1 cup Mayo
Shredded Coleslaw 
Avocado 

Step 1) Heat oil in skillet with lid on. 
Step 2) While oil is heating put Flour, Crushed Ritz and Flour in 3 separate bowls. Dip the fish in flour, then buttermilk, then crushed crackers.  

Step 3) Place in Skillet, cover and allow to cook.  Allow them about 3-5 minutes per a side depending on how thick of a filet you chose.

Step 4) {TACO SLAW}  Ok while you are in between flipping the fish you want to mix the Taco Seasoning, Mayo and Shredded Slaw together. Mix well then set in fridge while you cook the remaining fish.
Step 5) Dice Avocados- simple enough (:
Step 6) Assemble like so and then devour!! 



side notes: I opted for vegetable oil over EVOO as it seems to cook at a higher temp and not burn the fish.  Also, for any of you that hate buying a carton of buttermilk for a recipe and using less then half then throwing away, here is another option.  Powdered buttermilk with an incredibly long expiration date, just add water.  Pure Genius!
