Best Pancake Recipe Ever (AND NO SUGAR)

Sorry no pictures of this but trust me, these are the best pancakes EVER!!
Ingredients:
1 ripe banana mashed well
1 egg well beaten (put these together then add milk)
Approx 1 1/2 cups of whatever milk you like
1 1/2 cups plain flour
2 tbsp baking powder
Dash salt
1/4 cup wheat germ
2 Tbsp melted butter

Mix wet ingredients then add dry and mix well. If it seems too thick add some milk, too thin add a little flour. It is very forgiving, just add what you need to get the best texture. At the end melt 2 tablespoons of butter, cool slightly and stir into mixture. Make sure water droplets dance across the griddle (to make sure it's very hot). You want to see a few bubbles on the top of the cooking pancakes but don't let them get too cooked before you turn them or they won't rise and be fluffy.
Top to your preference and ENJOY!!!

  1. These are wonderful! We just recently removed all refined sugar from our diet and I have been looking for a good pancake recipe for Saturday mornings. We have tried them with applesauce but that makes for an odd texture. These are great. I doubled the recipe (we are a family of 7) and did 1/2 wheat flour 1/2 white flour. The kids gobbled them up. Thanks for the recipe :)
